The KAI Shun Premier Tim Mälzer is a premium Japanese kitchen knife from the Shun Premier Tim Mälzer series, developed in collaboration with German chef Tim Mälzer. It is a 24 cm carving/slicing knife designed for precise, clean cuts of ham, salmon, meat, fish, fruits, and vegetables. The blade features a VG-MAX core with 32 layers of Damascus steel cladding, a hammered tsuchime finish to help food release, and a very sharp 15° per side edge. The ergonomic pakkawood handle is symmetrical, full-tang for improved balance and stability, and finished with the engraved Tim Mälzer bull logo. Made in Japan and supplied in a wooden box, it is not dishwasher safe and is intended for soft foods only, not bones or frozen items.
